Escape the Barbary pirates and the twisted grips of the Kraken at the oldest maritime hotel in Falmouth with a brand new cocktail collection here at the Water’s Edge.
For our latest series of tempting tipples, expert mixologist Holly Bennett has curated and crafted a delicious selection of cocktails, inspired by our friends at The National Maritime Museum’s latest exhibition, Monsters of the Deep.

Umibozu
House infused lemon and thyme gin, yuzu sake, orange marmalade, ginger, aquafaba
Inspired by the flavours of Japan, where this sea creature resides, Holly created a delicately balanced citrus cocktail, using ginger often cooked with in Japanese cooking and Sake often drunk ceremonially. These spicy and tart flavours match perfectly with rich orange marmalade. Similarly, the aerated aquafaba marries well with the zest of this cocktail, giving a smoothness to every sip. This boozy number is the perfect embodiment of Umibozu.
what lies beneath
Tarquin’s Seadog Navy gin, Knightor Rosso vermouth, plum liqueur
A simple and delicious take on a well-loved classic. What Lies Beneath mimics a gin martini, adding speciality notes of rose and plum. Based on the Cornish sea monster Morgawr, Holly’s inspiration shines through with her choice of ingredients. Local Knightor vermouth and Tarquin’s gin, similarly characterise the monster’s heritage, all within the form of a tempting tipple.
The song of the sea
Ketel One Citroen vodka, apricot brandy, orgeat, lemon, greek yoghurt, orange blossom
A cocktail that fits the Siren perfectly, beautiful but dangerous. Holly kept this in mind whilst creating this summery tipple. A fresh and citrusy drink, perfect for warm days on our sun-soaked terrace. Delicate flavours of orange blossom, lemon and rose are served in a martini glass making The Song of the Sea beautifully light. If you close your eyes while slowly sipping, you’re sure to be transported to the water’s edge.
The Island
Brugal Anejo rum, Velvet Falernum, lychee syrup, lime, pineapple juice, grapefruit juice, cherry bitters
A tipple to embody the Caribbean coast. The Island is packed full of tropical fruit and warm spices. Taking inspiration from the age-old stories of sinking island whales in the warmer regions, Holly has married Tiki flavours of lychee and grapefruit together with Brugal Anejo rum – containing full-bodied notes of vanilla, cocoa and spices. Imagining warm coasts, lush island greenery, the sun beaming down and the blue waters. This drink has captured the flavours of sunshine.
Dive into a taste of Cornwall’s tall tales, look out onto the wide-open waters and hope – with all your might – that nothing is lurking in the depths. This collection is available from Wednesday 20th April.
Our inspiration
This deliciously dangerous new cocktail series is inspired by our friends at the National Maritime Museum and their award-winning exhibition Monster’s of the Deep. We aim to support local initiatives like these and will be donating 50p of every purchase of The Beast That Glistens to the NMMC. This will help them towards continuing to preserve maritime heritage for future generations. Not only will we be supporting the NMMC but The Greenbank believe that independent charities are an integral part of our Cornish community and we are proud to be working with many throughout the year.
