Nick’s Community Kitchen: simple flatbread recipe
Like everyone else at the moment, we’re all trying our best to navigate through this confusing and difficult time. To spread some much needed positivity, boost our own moods and morale, and keep a smile on our faces, we’ve launched a new online series with our Executive Chef Nick Hodges – “Nick’s Community Kitchen”.
Every few days via our Facebook page, Nick will be demonstrating some simple but delicious and fun dishes for you all to try at home. From family favourites to get the kids involved to recipes that use ingredients you can source from your local suppliers, each episode Nick will be sharing his top tips for making your food go further, whilst doing what he does best – whipping up delicious dishes and cheering us all up.

Today we bring you – Nick’s two ingredient flatbread recipe
Nick says: “A fantastic light lunch, accompaniment to dinner, or a great replacement if you struggle to get your fresh bread. The easiest griddled flatbread I know and an absolute favourite of Bobby’s, our Head Chef at The Greenbank. What do you need? The answer – not much! Just self-raising flour and natural yogurt.”
If you don’t have the yogurt, you can replace with milk. If you don’t have self-raising flour, again no problem – self-raising flour is just a pre-mixed blend. Here’s how to make your own!
Homemade self-raising flour:
- One cup of plain flour
- Two teaspoons of baking powder
- Pinch of salt
- Curry spice – optional
- Dried coriander leaf – optional
What we had for today’s lunch:
- Tinned tuna
- Diced cucumber
- Diced tomato
- Any kind of lettuce or spinach
- Any crisp green vegetable such as green beans or peas
Tune into Facebook to follow the full method, but you simply have to roll your breads into individual balls then flatten and fry on each side until golden.
