Nick’s Community Kitchen: Chicken Soup Recipe

To keep a smile on our followers’ faces and to boost our own morale, we’ve launched a new online series with our Executive Chef Nick Hodges – “Nick’s Community Kitchen”. Today we bring you – NICK’S CHICKEN SOUP RECIPE

Nick says: “During these most unusual of times, my store cupboard use-up recipes will be our family lunches or dinners. Food and the joy of cooking has over the years been used to help in the craziest ways. I hope that these simple recipes will support my friends, colleagues, key workers and the entire community. Let’s have some fun, stimulate the tough times ahead and importantly use up our supplies whilst saving our income.”

You will need:

  • Leftover chicken carcass/bones – cooked or raw
  • Leftover onion, garlic bits, carrot ends – pretty much any vegetables will work to add flavour (use what you have left and what your family likes)
  • Chicken stock cube
  • If you have something like pesto, chorizo or smoked bacon bits, they will be great to flavour – my gang love pesto
  • Plain flour (if you are a coeliac or have an intolerance or allergy to gluten, gluten free flour or cornflour will work)
  • If you don’t have flour, the soup will still taste great without it, but it will be thinner like a broth
  • Salt and pepper
  • Pinch of dried herbs or a sprig of herbs from the garden

Getting it done:

  • In a saucepan or deep frying pan, add a little oil, butter or spread
  • Chop up your leftovers and gently cook – try not to brown them!
  • Add the chicken bones and continue frying
  • Sprinkle over flour until the oil/moisture has been absorbed
  • Pour over a couple pints of water then sprinkle in the stock cube
  • Stir and simmer for an hour
  • Season with salt and pepper
  • Keep tasting then strain when you’re ready, removing the bones but keeping the liquid, which should now be lightly thickened

Top tips:

As soon as you have the soup base, add anything else to make it hearty:

  • Tinned beans
  • Sweetcorn
  • More veggies
  • Cream or crème fraiche
  • Curry spice – anything goes
