Introducing Hotel Manager Sophie Colston
Sophie first began working at The Greenbank at the age of fifteen as part of her work experience she needed to complete for school. Originally, Sophie wanted to study psychology at college, before realising her passion was in customer service and hospitality. She then enrolled in catering college to pursue her passion in becoming a chef.
With her family being a huge inspiration for Sophie, she says that growing up and seeing her family work so hard, whilst offering support and advice for her own career, gave her the push to go forward with what she wanted to achieve. With a patisserie NVQ under her belt, as well as three years’ experience in pastry, Sophie became a Duty Manager followed by Assistant General Manager to finally become Hotel Manager. Working her way up, Sophie has worked at the hotel for fifteen years.
“I am so lucky to have been brought up in Cornwall and now I’m bringing up my own family. I want to be able to show people who are visiting Cornwall what a wonderful place it is.”
What’s your favourite activity in the winter?
When the dog ban is lifted in October, there’s nothing I love more than walking on the beach and coastal paths with my dog in all my winter gear.
What watersports would you recommend?
I enjoy paddle boarding – I wish I had more time to be in the water every day to explore our coasts a bit more!
What makes Falmouth so special to you?
My whole family grew up here, so there’s a lot of family history. I love knowing all the local people and reminiscing how Falmouth used to be – especially as no one has a bad word to say about how much it has changed! Falmouth can only get better every year. I love talking to our guests who are visiting Cornwall – it still amazes me that we live in such a wonderful place that people from all over the world consider it a holiday destination.
What Cornish delicacy is your favourite?
I love Cornish fish and chips. You can’t get any better than fresh local fish and chips. Or my nan’s pasties – can’t forget about those!
