Introducing Head Chef Bobby Southworth

Our new Head Chef Bobby Southworth describes his food as “flavourful, passionate and surprising.” He first started cooking when he was 19 years old whilst working as a kitchen porter in Falmouth. Although he admits he never thought that he would be a chef, he fell in love with it as soon as he began experimenting and his obsession grew from there. He tells us:

“I’m the kind of person who, when a door opens, I just jump right through. The Greenbank has such a great reputation and I wouldn’t want to be anywhere else. A friend of mine said to me: ‘If you ever get a chance to work with Nick Hodges (our Executive Chef), then do it’. It was actually Nick that called to ask if I wanted to work with him at the Water’s Edge – and I was so glad he did.

Being Cornish born and bred, I’m passionate about provenance. My inspiration for our new menus is driven by my love of food and of course Cornwall. Our kitchen team attempt to highlight the very best local produce but for a Cornish market; you could say ‘tasting the views’.


There’s so many great places in Cornwall to explore – especially places that I still haven’t been to, so I really enjoy finding new favourites. I also love to play golf in the summer, especially as the course is usually next to a beach for its backdrop!


Everything about Cornwall is pretty amazing. It’s such a nice place to live and I couldn’t see myself anywhere else.

Where is your favourite place to eat in Cornwall?

Definitely the Driftwood in Portscatho. The chef, Chris Eden, really pulls out all the stops and his food is impeccable.


Why not The Greenbank is the question. I’ve always lived in Falmouth and I’ve always heard good things. When the chance arose to join the team, I decided it was the right time for me. It was possibly the best move I could make for my career.
